We're Erin and Matt, and we've spent 24 years and 32 countries figuring out that the best part of any trip usually isn't on the itinerary.

We've been traveling together almost as long as we've been married, and somewhere along the way it stopped being vacations and started being how we live. We're not sightseeing-checklist people. We'd rather spend an extra hour at a market stall eating something we can't pronounce than rush to the next UNESCO site. Know the people, know their food. That's our whole philosophy.

We do keep one list, though. We call the big ones Lifetime Pities, a phrase we picked up from a Chinese tour guide. They're the places you've dreamed about since you were a kid, the ones you'd regret never seeing. The Pyramids of Giza. The beaches of Thailand. Finnish Lapland in the dead of winter. The Faroe Islands, which I call the edge of the world.

But the moments we talk about most usually aren't the landmarks. It's Fahti, who walked us through the real Cairo. It's the young Berber man in Fes whose family had been in leather production for years and took us behind the scenes to witness every painstaking step of the process. Those are the real moments, the best moments.

Matt takes the photos and barely edits them. I write it down. And we're honest about all of it, including the parts that didn't go as planned.
